The abalone shellfish belongs to the Haliotis family (a greek name meaning ear of the sea). It is a single shell sea mollusk, found in shallow coastal waters. In New-Zealand, this shell is famous for its taste, but most of all for the iridescent blue colour of the nacre of its inner shell.

In this Freemason version of the Laguiole, discover how abalone superbly compliments the Damas blade. Damas blade are made using a process similar to puff pastry : several types of steel are welded together and folded over each other. This manufacturing process produces extremely solid blades, which are also unique ! In fact, no two Damas blades are exactly identical !
