Saint Guilhem (William), cousin of the great Charlemagne, built the abbey of Gellone at Saint-Guilhem le Désert more than 1200 years ago.
This remarkable abbey in the Herault Department of France lies on the Way of Saint James of Compostela and is a Unesco classified building.
On this occasion Pierre Yves Javel created the Saint William knife.
Its blade is in the shape of a willow leaf and the slender handle ends in a ball.
The front part is decorated with a cardabelle, the thistle which grows in the Causse region.
Throughout the ages this plant is used to be nailed on the barn door for good luck.
